Midi Controller problems

I have a M-Audio O2 25 key Midi Controller. Documentation is spare for ma beginner. I want to be able to assign instrument changes (vibes, etc) to the assignable buttons, I know how to selsct a controller but some terms still confuse me: controller assign, channel assign, program change. Also one, I assign an instrument to let's say a button, how do I store in memory. I am outputting to mRoland VSC software synth and using Cakewalk sequencer prog with the O2. Many thanks
