The echo mode is under the "options" (I think) pull-down menu in Cubasis. Choose "Midi Thru"

: point the source of incoming midi at channel 2, (that way, cubasis will play back channel 2 will you hit the key board)
: it will also echo back channel 1, while you trying to recod 2.
