Desperate cry!

Can someone help me out? I'm from the Netherlands (Holland, Europe) and I want to know more of the basics of MIDI. I read the basic manual on this site, but I can't really understand some difficult/specific words.
Situation:
I connected with a midicable my old Yamaha PSR-48 keyboard (OUT) to my computer (IN). The software I use is Yamaha XG Works.
Everything works pretty good, but there are some things I just don't understand.
I have a Creative Soundblaster 1024 Live! Platinum 5.1. When I press a key on the Yamaha, I hear a sound via the speakers that are connected to my computer. So far everything is all right. What I also can do is change these sounds by the computer. But they all sounds sound "plastic", I mean not realistic. Just like my old keyboard, actually.
Why is this, isn't my soundcard good enough?
