It could almost certainly be done, but it would be a huge amount of work. I recently analyzed the QS8 piano sample because I'm slowly working on a "pull all the stops out" super piano for the QS. The QS8 piano is a multisample and it's built from 20 different samples for different key ranges, so you could build 2 multisamples that each take 8 megs and cover half the keyboard. But good samples alone don't make a good piano; the programming of the patch is probably even more important. Though you should always be able to make a better sounding instrument with more sample space, the Alesis samples are pretty good.
Have you tried my piano bank? It took me months before I really figured out how to make a proper sounding and responding piano, and I think you'd have to be pretty good and experienced to do it much quicker.
I'd recommend checking out my bank before you spend too much time and money on other things. I have something like 80 pianos in there that cover a pretty broad style range, and for my stuff they play great, much better that the factory patches.
If you do go the "roll your own" route, I'm certain you could make an amazing 16 meg piano on the QS, but if you're not an experienced sound designer I suspect it will take you about a year of part-time tinkering to really get it fine. I would love to hear what you come up with if you do this!
One more thing, when I was designing my patches, I was comparing them to my reference Boesendorfer at work (lucky me!), and having a reference piano with tone similar to the sample source is invaluable when you are trying to make a good piano.
