If I understand your problem correctly,you need to start with tne mix called multitimbral which is set up as ch.1-sound 1,ch.2-sound 2 etc.
Or you need to go into a mix and edit the parameter that is under KYBD/MIDI and go to MIDI group and turn this off for sounds that you dont want to play on a specific channel.It is easiest to start with the Multitimbral mix however and change sound to what you want and save the changes to a new mix.
